Tasla Chicken

Tasla chicken consists of succulent roasted chicken pieces marinated in different spices which is then bathed in a mixture of creamy yoghurt sauce and butter .

Ingredients
  

For First Marination

  • 1 kg Chicken with Bones
  • 1 tbsp Ginger & Garlic Paste
  • 1 tsp Red Chilly Powder
  • 1 tsp salt

For Spice Mix

  • 2 tsp Coriander seeds
  • 2 tsp cumin
  • 4-5 Dry Kashmiri Red Chilies
  • 1 tsp Fennel Seed
  • 10 Black Peppercorns

For Second Marination

  • 4 tbsp Hung curd or Full fat greek yoghurt
  • Prepared spice mix
  • 1 tsp sonth Powder/Dry ginger powder
  • 2 tsp Amchoor powder/ dry mango powder
  • 1/2 tsp Black Salt
  • 1/2 tsp Salt or to taste
  • 2 tsp Chicken masala homemade or store bought(tandoori/tikka)
  • 1/2 tsp Chaat masala
  • 1 tsp Red Chilly Powder
  • 2 tbsp Lemon Juice
  • 2 tbsp Oil

For yoghurt Sauce and butter tadka

  • 1/2 cup Whisked Thick Yogurt Full Fat
  • 3 green chillies
  • handful of coriander and mint leaves
  • 3 tbsp Thick cream or Malai
  • 1 tsp Chaat masala
  • A pinch of salt
  • 1/2 cup Melted Butter

Instructions
 

For First Marination

  • In a bowl combine the ingredients for the 1st marinade.
    Add washed chicken, ginger garlic paste, salt and red chilli powder. Mix well and keep aside for 15 minutes.

For spice Mix

  • In a mixer grinder add coriander, cumin, fennel seeds. Add dry red chillies and pepper corn , grind into a fine powder.
    Set aside.

For second Marinade

  • In a large bowl add hung curd or Greek yogurt.
    Now add all the dry ingredients ginger powder, amchur powder, salt, black salt, red chilli powder, chaat masala, chicken masala(tikka or tandoori or any masala ), lemon juice, oil and make a smooth mixture.
  • Add the marinated chicken pieces and mix until all pieces are well coated in the masala.
    Let us rest for at least 1 hour.

For Yoghurt sauce

  • In a mixer grinder add full fat yoghurt, green chillies, coriander and mint leaves. Blend until your get a smooth mixture.
  • Now add cream, chaat masala and salt. Mix until smooth.
    Keep aside.

For Cooking

  • In a pan heat oil and add marinated chicken.
    Cook on High flame for 3-4 minutes.
  • Now reduced the flame and cook on medium to low flame until the chicken is cooked completely and water is dried.
  • Now to give the charcoal effect , cook the chicken on direct flame on both sides for 2-3 minutes. Chicken is ready.
  • In a large mixing bowl add the cooked chicken and pour yoghurt sauce on the chicken. Mix untill well combined.
  • Heat butter in a small pan and pour on the chicken.
    Serve hot.
