White Chicken Kadhai
This white Chicken Kadhai is a rich and creamy chicken curry .
It consists of tender chicken pieces cooked in a creamy sauce made with cashew, onions, and a blend of aromatic spices. The word “kadhai” refers to the traditional wok-like cooking vessel in which the dish is typically prepared.
This recipe is simple and is loaded with flavors and comes together in no time using a few simple ingredients. Serve it with Naan, Laccha Paratha, or Tandori Roti for an indulgent meal.

Marinade the chicken.
Boil onion ,chilli and cashew. Blend into a fine paste.

White Masala
- 3 Onion
- 4-6 green chillies
- 10-12 Cashew
- Water for boiling
For Chicken Marinade
- 2 Boneless Chicken breasts pieces or 300gm Boneless chicken cubes
- 3/4 tsp salt
- 1&1/2 tbsp Ginger & Garlic Paste
- 1&1/2 tbsp Whisked Thick Yogurt Full Fat
- 1 tsp Coriander Powder
- 1/2 tsp Cumin Powder
- 3/4 tsp Black Pepper Powder
- 1/2 tsp Green Cardamom powder
- 1/4 tsp Turmeric Powder
For Gravy
- 2 Green Cardamom
- 1 Black Cardamom
- 2-3 1inch Cinnamon Stick
- 1 Bay Leaf
- 1 tsp Shah jeera caraway seed
- 2 cloves
- 4 tbsp oil
- salt to taste
- 1/2 tsp Black Pepper Powder
- 1/2 tsp Coriander Powder
- 3/4 tsp Garam Masala Powder
- 1 tsp Kasuri Methi dry fenugreek leaves
- 1 tbsp Chopped Coriander & Mint leaves
- 1 2inch ginger Julienne cut
- 1-2 tbsp Lemon Juice
- 3-4 Green Chillies slit
- water as needed to adjust the gravy
For White Masala
Soak cashews in 1/2 cup water for 15 minutes.
In a pan add 2-3 cups of water and bring it to a boil. Add onion, green chillies and soak cashews. Cover and reduce the flame to low. let it simmer for 8-10 minutes. Takeout in a bowl and let it cool for few minutes. Blend to a fine paste , add watered if needed. Masala is ready. Keep aside.
For Gravy
In a pan heat oil and add dry spices. Fry for 1 minute.
Add marinated chicken pieces and cook on high flame for 2-3 minutes.Reduce the flame and cook for 5-7 m inutes. Add the prepared white masala and cook on high flame for 2-3 minutes.
Add some water, cover and cook until the chicken is cooked completely.
Now add the salt, coriander powder, garam masala powder, black pepper powder and kauri methi.
Add chopped coriander & mint leaves, slit green chillies and ginger.Add lemon juice. Add water if needed to adjust the consistency. serve Hot with naan or rice.
