This white Chicken Kadhai is a rich and creamy chicken curry .It consists of tender chicken pieces cooked in a creamy sauce made with cashew, onions, and a blend of aromatic spices.
In a pan add 2-3 cups of water and bring it to a boil. Add onion, green chillies and soak cashews. Cover and reduce the flame to low. let it simmer for 8-10 minutes.
Takeout in a bowl and let it cool for few minutes. Blend to a fine paste , add watered if needed. Masala is ready. Keep aside.
For Chicken marinade
In a bowl add chicken and all ingredients mentioned above for them marinade. Let it rest for 15 minutes.
For Gravy
In a pan heat oil and add dry spices. Fry for 1 minute.
Add marinated chicken pieces and cook on high flame for 2-3 minutes.Reduce the flame and cook for 5-7 m inutes.
Add the prepared white masala and cook on high flame for 2-3 minutes.
Add some water, cover and cook until the chicken is cooked completely.
Now add the salt, coriander powder, garam masala powder, black pepper powder and kauri methi.
Add chopped coriander & mint leaves, slit green chillies and ginger.Add lemon juice. Add water if needed to adjust the consistency.
