The recipe also makes the best use of leftover Vegetables in the fridge.
Serve these as a mid day snack or pack in lunch box for kids. you can also serve these with fried or lemon rice or along side daal chawal.
Preparations
Prepare the coating mixture.
Steam the vegetables of your choice.
Mash and chop all the vegetables. Add dry spices and a table spoon butter.
Add cheese and mix until well combined. Shape into round discs & shallow fry.

For Cutlets
- 8-10 beans
- 10-12 Big Cauliflower florets
- 2 medium Carrots
- 2 medium potato
- 1/2 Green Capsicum
- 1/4 cup chopped spring onions
- 6 Garlic cloves
- Handful of coriander and mint leaves finely choppes
- 1-2 Green Chilies finely choppes
- 1 tsp salt or to taste
- 3/4 tsp Paprika powder
- 1/2 tsp Black Pepper Powder
- 1/2 tsp Oregano
- 1/2 tsp Italian seasoning optional
- 1 tbsp Butter at room temperature
- 5-6 cheese cubes or slices
- 5-6 tbsp Oil for frying
For Coating
- 1&1/2 cup corn flakes
- 1/4 tsp salt
- 1/4 tsp Black Pepper Powder
- 1/3 cup all-purpose flour
Wash and clean the vegetables of your choice using water.Steam the washed vegetables using a steamer or pressure cook for 1 whistle until the vegetables are soft and cooked 90%. Finely chop the carrots, beans, spring onion, capsicum.Mash the boiled potato & cauliflower. Combine all the vegetables in a bowl. Add chopped garlic, green chillies, coriander & mint.
Add the dry spices & butter. Mix until everything is well combined.
Add cheese cubes or slices , mix well. Shape this mixture into round discs or as desired. Keep aside. You can add an extra potato if the mixture is very soft.
To Prepare the Coating crush the corn flakes and add in a bowl.Add salt & pepper. Add flour and mix well. Now coat the prepared cutlets with corn flakes mixture and keep in the freezer for 30 minutes. This step is optional. But I highly recommend to freeze the cutlets for the best results and perfect texture.
Heat some oil in a pan on medium flame.Shallow fry the cutlets on both sides for 3-5. minutes until golden brown.Serve hot with ketchup or green chutney.
