For Coating
1&1/2cupcorn flakes
1/4tspsalt
1/4tspBlack Pepper Powder
1/3cupall-purpose flour
Instructions
Wash and clean the vegetables of your choice using water.Steam the washed vegetables using a steamer or pressure cook for 1 whistle until the vegetables are soft and cooked 90%.
Finely chop the carrots, beans, spring onion, capsicum.Mash the boiled potato & cauliflower. Combine all the vegetables in a bowl.
Add chopped garlic, green chillies, coriander & mint.
Add the dry spices & butter. Mix until everything is well combined.
Add cheese cubes or slices , mix well. Shape this mixture into round discs or as desired. Keep aside. You can add an extra potato if the mixture is very soft.
To Prepare the Coating crush the corn flakes and add in a bowl.Add salt & pepper. Add flour and mix well.
Now coat the prepared cutlets with corn flakes mixture and keep in the freezer for 30 minutes. This step is optional. But I highly recommend to freeze the cutlets for the best results and perfect texture.
Heat some oil in a pan on medium flame.Shallow fry the cutlets on both sides for 3-5. minutes until golden brown.Serve hot with ketchup or green chutney.
