Vegetable Cheese Cutlets

These mix vegetable cutlets are perfect for snack time.
These vegetable cutlet can be deep-fried, baked, or air fried as per your requirements.

Ingredients
  

For Cutlets

  • 8-10 beans
  • 10-12 Big Cauliflower florets
  • 2 medium Carrots
  • 2 medium potato
  • 1/2 Green Capsicum
  • 1/4 cup chopped spring onions
  • 6 Garlic cloves
  • Handful of coriander and mint leaves finely choppes
  • 1-2 Green Chilies finely choppes
  • 1 tsp salt or to taste
  • 3/4 tsp Paprika powder
  • 1/2 tsp Black Pepper Powder
  • 1/2 tsp Oregano
  • 1/2 tsp Italian seasoning optional
  • 1 tbsp Butter at room temperature
  • 5-6 cheese cubes or slices
  • 5-6 tbsp Oil for frying

For Coating

  • 1&1/2 cup corn flakes
  • 1/4 tsp salt
  • 1/4 tsp Black Pepper Powder
  • 1/3 cup all-purpose flour

Instructions
 

  • Wash and clean the vegetables of your choice using water.
    Steam the washed vegetables using a steamer or pressure cook for 1 whistle until the vegetables are soft and cooked 90%.
  • Finely chop the carrots, beans, spring onion, capsicum.
    Mash the boiled potato & cauliflower. Combine all the vegetables in a bowl.
  • Add chopped garlic, green chillies, coriander & mint.
  • Add the dry spices & butter. Mix until everything is well combined.
  • Add cheese cubes or slices , mix well. Shape this mixture into round discs or as desired. Keep aside. You can add an extra potato if the mixture is very soft.
  • To Prepare the Coating crush the corn flakes and add in a bowl.
    Add salt & pepper. Add flour and mix well.
  • Now coat the prepared cutlets with corn flakes mixture and keep in the freezer for 30 minutes. This step is optional. But I highly recommend to freeze the cutlets for the best results and perfect texture.
  • Heat some oil in a pan on medium flame.
    Shallow fry the cutlets on both sides for 3-5. minutes until golden brown.
    Serve hot with ketchup or green chutney.
