Gajar ka halwa
Gajar ka halwa/Carrot halwa is a dish made all over India but with different variations. It is mainly a winter dessert eaten warm but it can also be served with vanilla ice-cream.
This recipe is very simple but takes a lot of time because it is cooked on low flame. I loved how it turned out just perfect as always!!

- 1 kg grated carrot
- 3 liter Full Fat Milk
- 3/4 cup Granulated Sugar
- 1 tsp Green Cardamom powder
- 1/4 cup chopped nuts
Heat milk in a heavy-bottomed pan, place over a high heat and bring to the boil.
Once boiling, add grated carrot and turn the heat down to medium. Cook stirring regularly, until the liquid has evaporated. This will take about 1 hour or more.
Add the sugar, cardamom & nuts raisins and continue cooking, stirring so the mixture doesn’t stick to the bottom. When you get the desired consistency you add add ghee & turn off the flame. Enjoy!!
For low fat gajar halwa use low fat milk & replace the sugar with date paste.
I have added less less sugar because the carrots i used here are sweet.
You can adjust the sugar according to your taste .
This halwa is made without mawa because we cooked the carrots for a long time in milk. Milk fat gives the rich texture & Flavors.
