Gajar ka halwa

Gajar ka halwa/Carrot halwa is a dish made all over India but with different variations. It is mainly a winter dessert eaten warm but it can also be served with vanilla ice-cream.

Ingredients
  

  • 1 kg grated carrot
  • 3 liter Full Fat Milk
  • 3/4 cup Granulated Sugar
  • 1 tsp Green Cardamom powder
  • 1/4 cup chopped nuts

Instructions
 

  • Heat milk in a heavy-bottomed pan, place over a high heat and bring to the boil.
  • Once boiling, add grated carrot and turn the heat down to medium. Cook stirring regularly, until the liquid has evaporated. This will take about 1 hour or more.
  • Add the sugar, cardamom & nuts raisins and continue cooking, stirring so the mixture doesn’t stick to the bottom. When you get the desired consistency you add add ghee & turn off the flame. Enjoy!!

Notes

For low fat gajar halwa use low fat milk & replace the sugar with date paste.
 I have added less less sugar because the carrots i used here are sweet. 
You can adjust the sugar according to your taste .
This halwa is made without mawa because we cooked the carrots for a long time in milk. Milk fat gives the rich texture & Flavors.
