Chicken Fajita Pasta
Chicken Fajita Pasta is one of our favorite family meals! It is a rich, creamy, and comforting dish packed with cheese, cream, chicken and tender pasta. If you’re someone looking for a little more heat then add some fresh green chillies or jalapeno to add an extra bit of kick to this cheesy dish. Best part is this comes together in just 30 minutes.

- 2 (250gm) Chicken Breasts cut into strips
- 1/4 cup oil
- 2 cups Penne pasta or any pasta
- 1/4 cup Green bell pepper (capsicum)
- 1/4 cup Red bell pepper (capsicum)
- 1 medium Onion chopped
- 3&1/2 cup water
- 3/4 tsp Cumin Powder
- 1 tsp Paprika
- 1/4 tsp Red Chilly Powder
- 1&1/2 tsp Salt or to taste
- 1/2 tsp Oregano
- 1/2 tsp Italian seasoning
- 1/2 tsp Black Pepper Powder
- 2 Green chillies chopped optional
- 1&1/2 cup Heavy cream
- 3/4 cup Grated cheddar cheese
Heat oil in a cast iron pan or any non stick pan.
Add chicken strips and fry on medium flame for 3-4 minutes.
Add bell peppers, onions, green chillies & garlic . Stir fry for 2 minutes.
Now add all the spices,1tsp salt and cook on low flame for few minutes until the chicken is tender and cooked completely. Set aside.
In a heavy bottom pan add water & bring it to a boil.
Add 1tsp oil & 1/2tsp salt and pasta. Cook on low- medium flame until the water dries pasta is cooked completely. (No need to drain the water)
Now add in the cooked chicken veggie mixture into the pasta and mix well until well combined.
Add heavy cream & grated cheese of your choice. I used cheddar cheese.
Mix well until everything is well combined. Check for salt add if required. Serve hot!!
