Chicken Fajita Pasta

It is a rich, creamy, and comforting dish, Packed with cheese, cream, chicken and tender pasta.

Ingredients
  

  • 2 (250gm) Chicken Breasts cut into strips
  • 1/4 cup oil
  • 2 cups Penne pasta or any pasta
  • 1/4 cup Green bell pepper (capsicum)
  • 1/4 cup Red bell pepper (capsicum)
  • 1 medium Onion chopped
  • 3&1/2 cup water
  • 3/4 tsp Cumin Powder
  • 1 tsp Paprika
  • 1/4 tsp Red Chilly Powder
  • 1&1/2 tsp Salt or to taste
  • 1/2 tsp Oregano
  • 1/2 tsp Italian seasoning
  • 1/2 tsp Black Pepper Powder
  • 2 Green chillies chopped optional
  • 1&1/2 cup Heavy cream
  • 3/4 cup Grated cheddar cheese

Instructions
 

  • Heat oil in a cast iron pan or any non stick pan.
  • Add chicken strips and fry on medium flame for 3-4 minutes.
  • Add bell peppers, onions, green chillies & garlic . Stir fry for 2 minutes. 
  • Now add all the spices,1tsp salt and cook on low flame for few minutes until the chicken is tender and cooked completely. Set aside.
  • In a heavy bottom pan add water & bring it to a boil.
  • Add 1tsp oil & 1/2tsp salt and pasta. Cook on low- medium flame until the water dries pasta is cooked completely. (No need to drain the water)
  • Now add in the cooked chicken veggie mixture into the pasta and mix well until well combined.
  • Add heavy cream & grated cheese of your choice. I used cheddar cheese.
  • Mix well until everything is well combined. Check for salt add if required. Serve hot!!
