Chocolate Loaf Cake

It’s a chocolate lover’s Dream Cake!! This cake is super moist and the frosting is thick and fudgy.

Ingredients
  

For Cake Batter

  • 1&1/4 cup all-purpose flour
  • 2/3 cup Cocoa Powder
  • 1/2 cup Butter at room temp
  • 1&1/2 cup Granulated Sugar
  • 3 large eggs at room temp
  • 1 tsp Instant coffee dissolved in 2 tbsp water
  • 1/4 tsp baking powder
  • 1 tsp Baking soda
  • 1/2 tsp salt
  • 3/4 cup milk at room temp
  • 1 tsp vanilla extract

Chocolate Frosting

  • 80 gm Dark chocolate
  • 1/4 cup heavy cream

Instructions
 

For cake batter

  • In a bowl combine Eggs, sugar, butter and coffee. Mix until it turns creamy and light.
  • Add cocoa powder, flour, baking powder, baking soda, salt and milk. Mix until well combined.
  • Preheat the oven at 180 for 15 minutes.
  • Prepare the 9" loaf pan. Grease and line the pan.
  • Pour the batter into the prepared loaf pan and spread evenly.
  • Bake for 55-60 minutes or until a toothpick inserted in the center of the loaf comes out clean. Cool in the pan on a rack for about 10 minutes

For Frosting

  • In a bowl take dark chocolate and pour hot cream on it. Mix until the chocolate is completely melted and mixture is smooth.
  • Refrigerate for 1 hour until it thickens .
  • Pour this carefully on cooled cake and refrigerate for 30 minutes to set.
    Serve and enjoy.
