White Chicken Biryani!

Ingredients
  

For Chicken Marinade

  • 1 kg Chicken with bones
  • 2 tbsp Lemon Juice
  • 1 tsp salt
  • 1/2 tsp Garam Masala Powder
  • 1/2 tsp Black Pepper Powder
  • 1 tbsp Biryani Masala
  • 2 tbsp Ginger & Garlic Paste
  • 3-4 Green Chilies
  • 1 big handful Chopped Coriander & Mint leaves
  • 1 tbsp oil

Almond paste

  • 15 almonds
  • 1/3 cup hot water

For Gravy

  • 1/2 cup ghee/oil
  • 2 medium size onion thinly sliced
  • 3/4 cup Whisked Thick Yogurt Full Fat
  • prepared almond paste
  • 2 tbsp thick cream or Malai
  • 3-4 tbsp fresh Mawa/Khoya
  • 3 Green Cardamom
  • 1 Star anise
  • 1/2 tsp Caraway Seed(Shahjeera)
  • 2 1inch Cinnamon Stick
  • 1 Strand Mace
  • salt to taste

For rice

  • 4&1/2 cups basmati rice
  • 3 1inch Cinnamon Stick
  • 1 bay leaf
  • 1 Star anise
  • 4 Green Cardamom
  • 4 cloves
  • 1/2 mace floret
  • 1 Black Cardamom
  • 1 tsp Caraway Seed(Shahjeera)
  • 2-3 litre water
  • salt to taste
  • 5-6 tbsp ghee to por on rice
  • 1/2 cup Finely chopped Coriander Leaves
  • 3-4 green chillies slit optional
  • 1 tbsp Lemon Juice

Instructions
 

For green masala

  • ⁠In a mixer grinder make a fine paste of green chilli, Coriander and mint leaves.
Keep aside.

For chicken marinade

  • In a bowl add washed chicken, lemon juice, salt, garam masala powder, black pepper powder, biryani masala, ginger garlic paste and prepared green masala and oil.
    Mix well until the chicken pieces are well coated. Let it rest for at least 1hour.

For Gravy

  • Soak almonds in hot boiling water for 30 minutes. Make a fine paste. Keep aside.
  • In a pan heat oil. Add sliced onion and fry until the color changes to slight golden. Add marinated chicken and cook on high flame for 5 minutes. 
  • Add cashew paste, yoghurt, dry spices, cream ,khoya(mawa).
  • Mix everything well and cook on medium flame until the chicken is tender and releases oil . Check for salt and add if needed. 
    The gravy is ready 

For Rice

  • ⁠In a heavy bottom pan or vessel Boil water. Add salt, dry spices.
    Add coriander & mint(optional).
  • Add soaked basmati rice and cook until 80% done. Darin the water.

  • ⁠In a pan add gravy oil and layer half amount of rice. Add ghee, chopped coriander, mint and green chillies. 


  • Add prepared Biryani gravy on top of rice.

  • Now add the remaining rice on top of it. Add the coriander, mint, green chilli , lemon juice and ghee on top.


    Cover and cook on Low flame for 15-20 minutes on dum.
    

Serve hot with raita.
