Creamy Chicken Wraps

These wraps with smoked creamy chicken with lots of veggies are definitely one of my favorite recipes to make when in a hurry, and my family absolutely loves them.

Ingredients
  

For Dry spice mix

  • 7-8 dry Kashmiri red chillies
  • 1 tbsp Coriander seeds
  • 1 tsp Cumin Seeds
  • 2 1inch Cinnamon Stick
  • 8-10 Black Peppercorns
  • 2 clove
  • 2 Green Cardamom

For Chicken marinade

  • 500 gm boneless chicken thighs or breast
  • 1 tbsp Lemon Juice
  • 2 tsp Ginger & Garlic Paste
  • 1 tsp salt
  • 1/4 tsp Turmeric Powder
  • 1 tsp Red Chilly Powder
  • 2 tbsp Whisked Thick Yogurt Full Fat
  • prepared dry spice mix

For cooking

  • 2 tbsp oil
  • 1 medium size onion sliced
  • 1/2 medium size Red and green Capsicum Julienne cut
  • 1 tbsp Finely chopped Coriander Leaves
  • 1&1/4 cup heavy cream
  • salt to taste
  • 1 tsp Kasuri methi
  • 1tbsp ghee +Charcoal for smoke
  • 6 Tortilla or parathas

Instructions
 

For dry spice mix

  • Dry roast all the dry ingredients mentioned above and make a powder.
    Keep aside.

For marinade

  • In a bowl add washed chicken, lemon juice, ginger garlic paste, red chilli powder, turmeric, salt , yoghurt and prepared dry spice mix.
    Mix everything well and let it rest for at least 30 minutes.

For Cooking

  • In a pan heat oil and add marinated chicken. Cook on until the chicken is tender and cooked completely. Switch off the flame.
  • Now take a red-hot charcoal and place the coal in small bowl .
    Then pour the ghee on it. Cover the dish so that the smoke doesn't escape.
    Let it rest for 3-5 minutes.
  • Now switch on the flame . Add the veggies of your choice. Cook on high flame for 2 minutes.
  • Add heavy cream and cook on low flame for 3-4 minutes. Add kasuri methi.
    Adjust the consistency as desired. Add water if needed. 
    The creamy chicken filling is ready.

For Assembling

  • Lay the pita flatbread open on a flat surface.
    Add the prepared filling in the centre and firmly roll it till the end.
  • Add the wraps to the skillet or griller, and press gently for about 3-4 minutes total, until golden brown on both sides.
    Serve hot.
