Chicken Roll

These roll consists of incredibly flavorful, succulent pieces of chicken and vegetables that are rolled into a soft flaky flatbread topped with mildly spices yoghurt chutney.

Ingredients
  

For Chicken Marinade

  • 500 gm Boneless chicken thighs or breast Cut into cubes
  • 1 tbsp Ginger & Garlic Paste
  • 1 tbsp lemon juice
  • 1/4 cup Whisked Thick Yogurt Full Fat
  • 1 tsp red chilli powder or to taste
  • 1/4 tsp Turmeric Powder
  • 1 tsp salt or to taste
  • 1 tsp Coriander Powder
  • 1 tbsp tikka masala
  • 1/2 tsp Black Pepper Powder
  • 1/2 tsp Cumin Powder
  • 1 tbsp Chopped Coriander & Mint leaves

To prepare chicken filling

  • 2 tbsp oil
  • 1 tbsp finely chopped garlic
  • Salt to taste
  • 1/2 cup Red and green Capsicum Julienne cut
  • 1 Onion sliced
  • 1 large Carrot julienne cut
  • 1 tbsp Soy Sauce
  • 1 tbsp Szechwan Sauce/chutney
  • water as need to cook the chicken
  • 7-8 Parathas or tortilla

For Yoghurt Chutney

  • 1&1/4 cup Full fat greek yoghurt
  • 1 tsp cumin
  • 2 Garlic cloves
  • salt to taste
  • 1/2 tsp pepper powder
  • 1 green chili Optional
  • handful of coriander and mint leaves

Instructions
 

For Chicken marinade

  • In a bowl add all ingredients mentioned above for chicken marinade. Mix well until the chicken pieces are well coated with the masala. Let is rest for 20-30 minutes.

To prepare the Chicken filling

  • In a pan or wok heat oil and add chopped garlic. Fry for 1 minute.
  • Add marinated chicken and Cook for 2-4 minutes on high flame.
  • Add some water , cover and cook for 7-9 minutes until the chicken is tender and 90% cooked.
  • Now add the veggies and mix well.
  • Add soy sauce and Szechwan sauce/chutney. Check for salt ,add if needed.
    let it cook on low flame for 5 minutes. Chicken filling is ready.

For Yoghurt Chutney

  • Make a paste of cumin, garlic, coriander, mint, green chilly, salt and pepper in. mixer grinder or on a grinding stone or mortar .
  • Add this paste to greek yoghurt and mix well. The chutney is ready.

Assembling

  • Spread the 1-2 tbsp of yoghurt chutney on the paratha or tortilla.
  • Add 2-3 tbsp of prepared chicken filling and roll the sides up to the middle or roll in a sandwich paper. Enjoy.
