Szechuan Chicken

This  Sczechuan Chicken is spicy, flavorful  and the perfect comfort food to pair with fried rice or noodles.

Ingredients
  

For Chicken Marinade

  • 1 kg Bone-In chicken pieces
  • 1 tbsp Ginger & Garlic Paste
  • 2 tbsp Lemon Juice
  • 1 tsp salt
  • 3/4 tsp Black Pepper Powder
  • 1 tsp Red Chilly Powder
  • 1/4 tsp Turmeric Powder
  • 2 tbsp thick full fat whisked yoghurt

For chilli garlic paste

  • 8-9 Kashmiri dry chillies
  • 3/4 cup hot boiling water
  • 8-9 cloves of garlic

For Gravy

  • 4 tbsp oil
  • 1 tbsp ginger finely chopped
  • 6-7 cloves garlic finely chopped
  • 5-6 Fresh Coriander long stem finely chopped
  • 1 small onion finely chopped
  • 3 tbsp tomato ketchup
  • 1&1/2 tbsp Soy Sauce
  • 1 tsp salt
  • 1 tsp Red chilli flakes or as per taste
  • 1/2 tsp Black Pepper Powder
  • 1/2 tsp Cumin Powder
  • 3 Green Chillies slit
  • 1 cup Water add more water if needed
  • 1 tbsp Chopped Cilantro/Coriander
  • 1 tbsp Spring onion greens

Instructions
 

For chicken Marinade

  • In a bowl add all ingredients mentioned above for chicken marinade.
    Mix until the chicken pieces are coated well. Let it rest for 30 minutes

For chili garlic paste

  • In a bowl soak chillies in hot boiling water for 20 minutes.
  • In a blender or food processor add garlic and smoked chillies along with water.
    Blend until you get a smooth paste. Keep aside.

For Gravy

  • In a pan heat oil and add chopped garlic, ginger and coriander stem.
    saute for 1 minute.
  • Add chopped onion and cook until it just changes t colour.
  • Add prepared chilli garlic paste, ketchup, soy sauce, salt, chilli flakes, black pepper and cumin powder.
    Cook for 2-3 minutes.
  • Add marinated chicken and cook for 5 minutes on high flame.
  • Now add water and cook until chicken is tender and soft.
    add spring onion green, coriander and green chillies.
    Serve hot with fried rice or noodles.
