Butter Chicken

Butter Chicken (chicken Makhani) is one of the most popular curries in the world.
It consists of bite-sized pieces of succulent boneless chicken thigh simmered in a creamy and super flavourful spiced tomato and cream sauce.

Ingredients
  

For Chicken Marinade

  • 500 gm boneless chicken thighs
  • 2 tbsp Lemon Juice
  • 1&1/2 tbsp Ginger & Garlic Paste
  • 3/4 tsp Red Chilly Powder
  • 1/4 tsp Turmeric Powder
  • 1 tsp salt
  • 1/4 tsp Garam Masala Powder
  • 1&1/2 tsp Coriander Powder
  • 1 tsp Cumin Powder
  • 3 tbsp butter for frying

For Makhni sauce

  • 1 tbsp oil
  • 1 medium sized onion
  • 4 medium sized tomato
  • 18 cashew nuts
  • 3-4 Kashmiri dry chillies
  • 2 tbsp chopped coriander leaves with stem
  • 1 tbsp Cumin Seeds
  • 1/2 tsp Green Cardamom powder
  • 1&1/2 tsp Coriander Powder
  • 1 tsp Red Chilly Powder
  • salt to taste
  • 1/4 tsp Turmeric Powder

For Gravy

  • 3 tbsp butter
  • 1 tbsp oil
  • 1/2 onion finely chopped
  • 1 tsp Kashmiri Red Chili Powder
  • 1 tbsp tikka masala powder
  • 1&1/2 tsp Kasuri Methi
  • salt to taste
  • 1/2 tsp Garam Masala Powder
  • 3-4 tbsp Heavy cream

Instructions
 

For chicken marinade

  • In a bowl add all ingredients mentioned above for chicken marinade, mix until all chicken pieces are coated well. Let it rest for at least 30 minutes.
  • In a pan add butter & cook the chicken for 8-10 minutes until the chicken is 80% cooked.
    Set aside.

For the Makhni Sauce

  • In the same pan add oil, onion, tomato, cashew, kashmiri red chillies, red chilli powder, turmeric powder, cumin seeds, salt, green cardamom powder and garam masala powder.
  • Add coriander leaves with stems . Add 1/2cup water, cover and cook for 10-12 minutes until tomatoes are soft and mushy.
  • Let the mixture cool for few minutes.
    Make a fine paste in a food processor, add water if needed.
  • Strain the mixture & discard the waste.
    Makhni sauce is ready.

For the gravy

  • In the same pan add oil & butter. Add chopped onion & fry for 1 minute.
    Now reduce the heat and add Kashmiri red chilli powder, & chicken tikka masala. Saute for 30 seconds.
  • Add prepared Makhni sauce & cook on medium to low flame for 5 minutes.
  • Now add fried chicken, salt, kasuri methi and garam masala powder. Cover and cook for 5-8minutes on low flame
  • Add 1 tbsp butter and heavy cream and Cook for 1minute.
    Garnish with coriander leaves, drizzle cream on top & serve hot with naan.
