Chicken Kebab Masala

Succulent kebabs made with minced Chicken, marinated in a variety of spices, grilled on a Pan/oven and further cooked in flavorful masala .

Ingredients
  

Chicken Marinade

  • 1/2 kg Chicken mince
  • 1 tsp Red Chilly Powder
  • 1 tsp salt
  • 1 tsp Coriander Powder
  • 1 tsp Cumin Powder
  • 1/2 tsp Garam Masala Powder
  • 1 tbsp Lemon Juice
  • 1 tbsp Corn Flour
  • 1 tbsp Chickpea flour/Besan
  • 2 Green Chilies chopped
  • 2 tbsp Chopped Coriander & Mint leaves
  • 1 tbsp Ginger & Garlic Paste

For Masala

  • 2 tbsp Desiccated coconut
  • 12 cashew
  • 1 tbsp Ginger & Garlic Paste
  • 1/3 cup oil
  • 1 Sliced Onion
  • 1/2 cup Whisked Thick Yogurt Full Fat
  • 1 tsp Coriander Powder
  • 1 tsp Cumin Powder
  • 1/2 tsp Garam Masala Powder
  • 1/4 tsp Chaat masala
  • 1 tsp Red Chilly Powder
  • salt to taste
  • 1/4 tsp Turmeric Powder
  • 2 Bay Leaves
  • 3 cloves
  • 1 Cinnamon Stick
  • 1 tbsp Lemon Juice
  • 1 tbsp Kasuri Methi
  • 1 tbsp Chopped Coriander & Mint leaves
  • 3 green chillies
  • water as needed

Instructions
 

For Chicken marinade

  • In a bowl add all the ingredients mentioned for chicken Marinade and mix until well combined. Let it rest for at east 30 minutes or overnight in refrigerator.

For Kebab

  • Shape the Chicken mixture into long 'tubes' around the skewers (seekhs) and place on to a grill pan, Brush them with oil and cook on each side for 7-8 minutes on low flame. or into the pre-heated oven and bake for 20-25 minutes. 

For Masala

  • Meanwhile, prepare the masala. Dry roast desiccated coconut & cashew on low flame for about a minute. Make a fine paste using water, keep aside.
  • In a heavy bottom pan heat oil & add whole spices.Add sliced onions & fry until onion turns slightly golden.
  • Add ginger garlic paste & spices. Cook on low flame for about 30 seconds. Add cashew coconut paste & cook for 30 seconds.
  • Add 1/4 cup water. Cover & cook for 5 minutes in low flame.
  • Now add whisked yoghurt & cook for 2 minutes.Now add cooked kebabs & mix carefully.Add 1/4 cup water, Cover and cook for 6-7 minutes. Add more water to adjust the gravy.
  • Add kasuri methi, lemon juice, coriander mint leaves and green chillies. Serve hot with naan or rice
