Puran Poli / Daal ki Puri

This is one of family's favorite dal puri made with minimal ingredients its very simple and taste delicious The recipe for puran Poli or Daal ki Puri may look intimidating but its really not. It does require some time and effort but the outcome is so delicious that its worth the effort.

Ingredients
  

For Puran (daal stuffing)

  • 3 cups Chana Daal (500gm)
  • 3&1/4 cup Sugar (or same amount of Jaggery powder)
  • 1/4 cup Cashew
  • 1/4 cup Almond
  • 2 tbsp Chironji optional
  • 250 gm Khoya (Or 1 cup milk powder)
  • 1 tbsp Cardamom Powder
  • 4&1/2 cup Water

For Dough

  • 1 cup Whole wheat Flour
  • 1 cup all-purpose flour
  • 3 tbsp Oil/ghee
  • 1 tsp salt
  • more than 1 cup water

Instructions
 

For Making Puran /Daal Stuffing

  • Wash chana daal in large bowl and add 4&1/2 cups of water. Soak this for 1-2 hour.
  • After 1-2 hours transfer this to a pressure cooker along with water and cook on high flame for 1 whistle. Now reduce the flame and cook for 5 minutes on low flame
  • If you're cooking in a pot without pressure then add more water and cook on low flame for 15-20 minutes until daal is soft.
  • Mean while make a fine paste of almond, cashew and chironji . Keep aside.
  • Make a smooth paste of cooked daal using hand blender or mixer grinder.
  • Now transfer this Daal paste in a large heavy bottom non stick cookware/pan. Cook on medium flame and stir continuously.
  • Add cardamom powder, sugar and keep stirring until sugar is dissolved completely.
  • Add the Prepared Nut paste & cook on medium flame. Keep stirring continuously.
  • Add in the Khoya or milk powder and continue to stir . Cook until the mixture dries. (yet soft)
  •  Test the puran, if your spoon stands straight in the puran and does not fall then its ready.

For making dough 

  • Make the dough by mixing the both flour,  salt and oil together. Add water and knead to form a smooth dough. Apply oil and knead again. Cover with a wet cloth and keep aside.

For making Puran Poli/Daal ki Puri

  • Knead the dough once again, divide the dough too into 6 balls .
  • Make 6 equal size Puran balls and keep aside.
  •  Heat a heavy bottom flat tawa or non stick tawa on medium heat. Take one dough ball, dip it in flour and the using a rolling pin make it into 3-4 inch diameter circle.
  • Place the puran ball in the center of rolled dough. The quantity of puran should be more than dough. Gather all the edges towards the center to enclose the stuffing and pinch together to seal/close.
  • Flatten the stuffed dough slightly and dip in flour and then gently roll it thin into 8-9 inch diameter.
  • Gently transfer the rolled roti on to the hot tawa. Once you see bubbles, flip the it Cook the other side until its golden brown and then flip again and finish cooking the first side until its nice, golden and crispy. 
  • Transfer to a plate and apply generous amount of ghee. Similarly make the remaining polis. Serve it with more ghee and milk on the side.

Notes

1. Here i have provided the puran quantity for 1/2 kg Chana daal. You can make 18 Puran balls using this recipe. 
Double the quantity of Dough to make puris for remaining puran .
 
2. You can freeze the puran in an air tight container up to two weeks in the freezer and 3 days in the refrigerator.
 
3. Your Puran consistency needs to be right, if its too wet the puri will tear while rolling and if its too dry it will be crumbly.
 
4. You could use Jaggery powder instead of sugar which makes it healthier.
