Fig Rice Kheer

Fig Rice Kheer is quite easy to put together and makes for a great dessert. Make this creamy, one-pot dessert with basic ingredients in under 40 minutes . Enjoy and serve this kheer chilled as a dessert this summer , you'll definitely love it!!

Ingredients
  

  • 1 Liter Full Fat Milk
  • 1/3 Cup Granulated Sugar
  • 2 tbsp Basmati Rice
  • 14 Cashew
  • 12 Almond
  • 1&1/2 tbsp Custard powder
  • 2 tbsp Cold powder
  • 5-6 Figs
  • 1 Cup Evaporated milk or sweetened condensed milk
  • Handful sliced Almonds, cashews and pistachios
  • Rose petals for garnishing

Instructions
 

  • Wash and soak figs in 1/4cupwater for 2hours
  • Wash and soak Basmati rice for 15 minutes
  • Boil milk in a saucepan on medium flame
  • Coarsely grind soaked rice, almonds and cashews and add to the milk. Keep stirring continuously to avoid lumps.
  • Cook for 5-10 minutes until the rice is soft and cooked.
  • Add evaporated milk or condensed milk and sugar , mix it well.
  • In a bowl make a lump free mixture of cold milk & custard powder and add stirring continuously.
  • Cook on medium to low flame for 5-8 minutes (Keep stirring).
  • Add soaked chopped fig and cook for 1-2 minutes.
  • Add sliced nuts and cool completely in refrigerator for 2-3 hours.
  • Garnish with rose petals and nuts or as desired. Serve Chilled.
  • If you're adding sweetened condensed milk , reduce thw quantity of sugar to half.
