Crispy Fried Onions / Barista

Crispy Fried onions is an essential ingredient that can be used in many dishes like biryani or curries or korma recipes. I have used these fried onions in Biryani, khorma and many more recipes. It can be fried in large quantity and you can store them for later use for many other recipes which require this ingredient.

Ingredients
  

  • 4 large onions
  • Oil

Instructions
 

  • Heat oil in a pan or a wok for frying the onions. Add a generous amount of oil to deep fry the sliced onions.
  • Finely slice the Onions lengthwise . When the oil is hot, add the sliced onions into the hot oil carefully. 
  • Now start frying them on medium heat initially. Use the spatula and keep stirring in between to fry the onions evenly. 
  • Then after few (5-6)minutes they start becoming soft, keep stirring it so that all the sliced onions are dipped in oil.
  • After few (12-14) minutes The onions will start to dehydrate at the water, changes colour to pink and will start to shrink in size.
  • Now after 4-6 minutes the onions will turn very light gold and starts to crisp up
  • Lower the flame Immediately and keep stirring continuously and fry on low flame. 
  • As soon as onions start getting golden , immediately start removing them. Timing is really important, A slight delay in taking out can changes the colour to dark brown.
  • Takeout on a clean dry plate or open vessel. Don't use kitchen towel or tissue roll. 
  • After removing when they attain the room temperature and Cripy texture use it or if you want to store these for later use tranfer them in a Ziplock bag or airtight container. Keep in the freezer.
  • 1 medium onion is equal to 1/2 cup of fried onions
