Quick and Easy Boneless Chicken Masala

This quick and easy chicken curry is rich, full of flavour and takes less than half an hour! It makes a great go-to mid-week meal for the whole family.

Ingredients
  

Whole Spice Mix

  • 3 sticks Cinnamon
  • 2 Green Cardamom
  • 5 Cloves
  • 1/2 tsp Black Peppercorns
  • 1 Black Cardamom
  • 1 tbsp Coriander seeds
  • 1 tsp Cumin Seeds

Chicken Marinade

  • 500 gm Boneless Chicken
  • 1 tsp Ginger & Garlic Paste
  • 1/2 tsp salt
  • 1/2 tsp Red Chilly Powder
  • 1/4 tsp Turmeric Powder
  • 1 tsp oil
  • 1 tsp whole spice mix
  • 1 tbsp Lemon Juice

For Masala

  • 1/3 cup Oil
  • 1 large Onion finely chopped
  • 2-3 Tomato puree
  • 1&1/2 tbsp Ginger & Garlic Paste
  • 1 tsp Red Chilly Powder
  • salt to taste
  • 3 tbsp Thick Yogurt Full Fat
  • Remaining whole spice mix
  • 2 tbsp Chopped Cilantro/Coriander
  • 2 tbsp Lemon Juice
  • 2-3 Green Chilies
  • 3/4 Cup water

Instructions
 

Whole Spice Mix

  • Make a fine powder of all the ingredients in a mixer grinder and keep aside.

For chicken marination

  • In a bowl add all ingredients mentioned for the chicken marination and Mix well. Keep in the refrigerator for 1-2 hours.

For masala

  • In a pan heat oil, add onions and fry until the colours changes to pink
  • Add ginger & garlic paste and fry for 30 seconds
  • Add Tomato puree, salt, red chilli powder and mix well. Bhonfy this masala on medium flame for 3-4 minutes
  • Add yoghurt and cook for 1 minute.Next add in the remaining whole spices powder and water. Cover and cook until the chicken is soft
  • Add lemon juice, finely chopped coriander leaves and green chillies.Cook for 3-4 minutes until you get the desired consistency. Add morr water if you don't want a thick gravy.
  • Serve Hot with Naan /chapati or Ric
