Tandoori chicken Boti Paratha Rolls

Flavorful & Juicy Homemade Tandoori chicken botis served with Fresh mint cilantro chutney, sliced shallots & bell peppers , a good drizzle of Garlic mayo. All wrapped up in a warm, flaky paratha.

Ingredients
  

Homemade Tandoori Chicken Masala

  • 14-16 pcs Cinnamon Stick each around 2 inch
  • 8 pcs Black Cardamom
  • 28 pcs Green Cardamom
  • 4 pcs Mace (Javitri)
  • 1/2 tsp Nutmeg Powder (Jaifal)
  • 3 tsp Fennel Seed (Sounf)
  • 4 pcs Star Anise
  • 4 tbsp Cumin Seeds (Zeera)
  • 4 tbsp Coriander seeds (Dhaniya)
  • 20-25 pcs Dry Red Chillies
  • 1/4 tsp Food Color
  • 4-6 pcs Bay Leaves (Tej Patta)
  • 1 & 1/2 tbsp Cloves
  • 1 & 1/2 tbsp Black Peppercorns (Kaali Mirchi)

Tandoori Chicken Boti

  • 500 gms Boneless Chicken Pieces
  • 3 tbsp Thick Yogurt Full Fat
  • 2 tbsp Lemon Juice
  • 1 tsp Red Chilly Powder
  • 1 tsp Salt
  • 1 & 1/2 tbsp Homemade Tandoori Chicken Masala
  • 2 tbsp Oil
  • 1 tbsp Ginger & Garlic Paste
  • 1 pinch Red Food Color

Paratha Dough

  • 3 cups All-purpose flour
  • 1 cup Water
  • 1 & 1/2 tsp Salt
  • 3 tbsp Ghee/Oil

Instructions
 

Homemade Tandoori Chicken Masala

  • In a mixer grinder or food processor add all the ingredients (mentioned in ingredients section for Homemade Tandoori Chicken Masala) and grind to a fine powder. Tranfer this mixture into an airtight container. Home-made Tandoori Chicken Masala is ready!!

Tandoori Chicken Boti

  • In a bowl add yoghurt and whisk well until smooth.
  • Now add in ginger garlic paste, red chilli powder, salt, lemon juice, prepared Tandoori chicken masala powder and food colour. Mix everything until well combined.
  • Add in the boneless chicken piece and mix well until all the chicken pieces are well coated.
  • Now add oil and mix well. Cover and keep in the refrigerator for overnight or atleast 2hr. 
  • Thread marinated Chicken on the skewers.
  • Heat a grill pan to medium Hot and add the chicken skewers cook on one side for7-8 minutes.
  • Flip over and cook for another 7-8 minutes.
  • Remove the chicken from the pan. Tandoori chicken boti is ready

Paratha Dough

  • In a bowl add flour, salt, ghee & mix well using hands. 
  • Add water gradually and make a soft dough. cover & keep aside for 10min.
  • Now make small balls of prepared dough, dust some flour in clean surface & roll to make a paratha.
  • Add some oil, dust flour. From the edges start to fold and pleat the paratha till the end.
  • Roll the pleated edges tightly. Join the edges
  • Lightly dust with flour and now roll into round parathas.
  • Cook this rolled paratha on medium-high heat for about 1 to 1-½ minutes on each side or until both sides are golden brown, pressing gently with a spatula.
  • Alternatively, you could also add some ghee and then pan fry the paratha.
  • Parathas are now ready.

 Assembling

  • Spread the green chutney on the cooked paratha.
  • Add prepared Tandoori chicken boti and veggies of your choice.
  • Drizzle garlic Mayo/plain mayo on it.
  • Now roll the sides up to the middle. You can use small toothpicks to hold them together or roll in a sandwich paper. Enjoy!!
