Homemade Chicken tikka Masala
- 3 inch Cinnamon Stick
- 1 Black Cardamom
- 3 Green Cardamom
- 1 Bay Leaf
- 2 tsp Coriander seeds
- 1 tsp Cumin Seeds
- 3 Cloves
- 1 inch Mace
- 1 pinch Nutmeg (jaifal)
- 1&1/2 tsp Shah Zeera
- 3/4 tsp Turmeric Powder
- 1&1/2 tsp Red Chilly Powder
- 1&1/2 tsp salt
- 1 pinch Red Food Color
For Chicken Marinade
- 1 kg Chicken Pieces
- All Prepared Chicken Tikka Masala
- 2 tbsp Lemon Juice
- 1&1/2 tbsp Ginger & Garlic Paste
For Biryani Masala
- 1 Large Onion
- 2 Meduim Tomato puree
- 1 tsp Salt
- 1-2 tsp Red Chilly Powder
- 1 tbsp Lemon Juice
- 1/2 tsp Turmeric Powder
- 1 Cup Whisked Thick Yogurt Full Fat
- 1 pinch Red Food colour
- 1 Cup Coriander & Mint Leaves
- 2 inch Ginger
- 5 Cloves Garlic
- 1 tsp Garam Masala Powder
- 3/4 cup Oil
For Rice
- 800 gm/5cups Basmati rice
- 2 1inch Cinnamon Stick
- 2 Bay Leaf
- 1 tsp Shah Zeera
- 7 Green Cardamom
- 6 Cloves
- 1 Star anise
- salt to taste
- 3-4 ltr water
- 1 tsp Oil
- 3 tbsp Fried Onions
- 2 tbsp Lemon Juice
- 2 tbsp Chopped Coriander & Mint leaves
- 1/2 cup ghee/oil
- orange food colour
For homemade Chicken Tikka Masala
For Biryani Masala
Heat oil in a pan,add marinated chicken, fry for 5-6 min. Takeout on a plate & keep aside
Now in the same pan add onion, fry till light golden.
Make a paste of Ginger, garlic, corainder and mint leaves.
Add this paste and tomato puree , Mix well.
Add salt, red chilli, turmeric & garama masala powder & colour. Add yoghurt and mix well.
Add fried chicken & lemon juice . Don't add water ,cook until the chicken is cooked. Masala is ready.
For Rice and Dum
In a big heavy bottom vessel add water, whole spices, salt, oil & bring to a boil. Add soaked basmati rice and boil till 80% done.
Strain the rice & divide in two parts.
Now spread the prepared gravy on rice in two layers.
Add some fried onions, chopped coriander & mint, lemon juice, colour and ghee/oil on top.
Cover completely & cook for 3-4min on medium flame then cook for 15min on low flame. Serve hot with raita.
