Sponge Cake

- 2 Piece Eggs large room temperature
- 1/2 Cup Granulated Sugar
- 1/4 cup oil
- 1 Cup Flour
- 1 tsp Baking Powder
- 1/2 Cup Hot Milk hot
- 1 tbsp Butter
- 1 tbsp Vanilla Extract
- 1 tbsp Lemon Zest
- 1/4 tbsp salt
- Grease a 7 inch  loaf pan & dust with Flour. Lne with baking paper and keep aside. 
- Preheat the oven at 180c for 15min 
- In a bowl beat eggs, add sugar & beat well for 3-5 min until Creamy, foamy & double in size 
- Add oil and mix well. 
- Sift in the flour , baking powder and salt . Mix using a spatula. 
- In another bowl/pan add milk, butter and vanilla. Heat in the microwave or bring this mixture to a boil in a pan and add this to the batter.  Mix well until well combined. 
- Transfer this to the lined pan and bake at 180c for 35-40 minutes or until the toothpick inserted in the middle comes out clean. 
- Remove from the oven and cool for 15 minutes.  
- Loosen the sides using a stick or knife and takeout the cake. Enjoy.
