For Gravy
- 3-4 tbsp oil
- 3 tbsp Ginger & Garlic Paste
- 1 tsp Red Chilly Powder
- 1/2 tsp Turmeric Powder
- 1&1/2 tsp salt or to taste
- 3-4 tbsp Biryani masala
- 1 tsp Garam masala
- 1 cup packed golden fried onion
- 1 cup Whisked Thick Yogurt Full Fat
- 4-6 Green Chilies
- 1 cup Roughly Chopped Coriander & Mint leaves
- 1 large Potato cut into cubes
- 2 Carrot cut into desired shape
- 1 Medium Capsicum cut into pieces
- handful Green beans
- 1 medium Tomato
- 1 tbsp lemon juice
For Rice
- 4 cups basmati rice
- 2 litre water
- 1 tbsp oil
- Salt to taste
- 2-3 Cinnamon Stick
- 4-5 Green Cardamom
- 1 tsp Caraway Seed(Shahjeera)
- 5-6 cloves
- 2 Bay Leaf
- 1 Black Cardamom
- 1 tbsp Chopped Coriander & Mint leaves
- 1/2 cup Ghee
- 1/4 cup fried onions
- 1/4 cup Chopped Coriander & Mint leaves
- Food color mixed with water
For Gravy
In a mixer grinder make a fine paste of green chilli, Coriander and mint leaves.Keep aside. In a pan heat oil. Add ginger garlic paste, red chilli powder, turmeric powder, Biryani masala, garam masala and salt.
Cook for 2 minutes. Add fried onions and prepared green paste. Add yoghurt and mix well.
Add all the vegetables and Cook for 2 minutes.
Add water, cover and cook for 8-10 minutes until vegetables are cooked.
Add lemon juice . Gravy is ready.
For Rice
In a heavy bottom pan or vessel Boil water. Add salt, dry spices and coriander mint. Add a teaspoon of oil.
Add soaked basmati rice and cook until 80% done. Darin the water.
In a pan add gravy oil and layer half amount of rice. Add ghee.Add prepared gravy on top of rice. Add ghee and fried onion, Now add the remaining rice on top of it. Add the fried onions, coriander mint on top. Add food color and ghee.Cover and cook on Low flame for 15-20 minutes.Serve hot with raita.
