Red Chicken Curry with Butter Naan

For Red Chicken Curry
- 1 Kg Chicken with Bones
- 2 tbsp Lemon Juice
- 1&1/2 tsp Kashmiri Red Chili Powder
- 1&1/2 tsp salt
- 1/4 tsp Turmeric Powder
- 2 tsp Coriander Powder
- 1&1/2 tsp Cumin Powder
- 1&1/2 tsp Garam Masala Powder
- 1/4 tsp Green Cardamom powder
- 2&1/2 tbsp Ginger & Garlic Paste
- 10 Almond
- 10 Cashew
- 1/4 Cup Desiccated coconut
- 1 cup Thick Yogurt Full Fat
- 1/2 cup Fried Onions Finely crushed or 3 Medium sized onions
- 1/2 cup Oil
- 1 tbsp Dark Soy sauce
- 1 tbsp Green Chilli paste
- 3 tbsp Heavy cream
- 3 tbsp Coriander Leaves + Mint leaves finely chopped
- 5-6 slit Green Chillies
For Butter naan
- 1/2 cup Warm water
- 1 tbsp Active dry Yeast
- 1 tbsp Sugar
- 1 tsp salt
- 1/2 cup Thick Yogurt Full Fat Whisked
- 1 tbsp Oil
- 1&1/2 cup all-purpose flour
- Butter as desired
For Red Chicken Curry
In pan dry roast cashew, almond and desiccated coconut until it very light golden. Remove immediately from the pan and cool completely.
Add this to the mixer grinder and make a fine powder, add water and grind to a smooth paste and set aside.
In a heavy bottom pan arrange washed Chicken pieces.
Add All spices, Yoghurt, Oil, fried onions, nut paste, lemon juice and Mix well .Let this rest for at least 1 hours in refrigerator or over night.
After resting for 1 or few hours cook this marinated chicken on high flame for 5min .
Now cover the vessel and cook on medium flame for 10 minutes
Now add Dark Soya sauce, green chilli paste and cook until chicken is tender. You can add more water at this point to adjust the consistency if the gravy.
Add heavy cream and mix well.
Add green Chillies , mint and coriander leaves and switch off the flame. Serve hot with naan or Rice.
For Butter Naan
In a bowl add warm water, sugar and yeast. Mix well and keep aside for 15 min until froth forms.
Now add in Flour, yoghurt, salt ,oil and mix well to form a smooth dough.
Cover and Rest the dough for 1-2 hours in a warm place until it rises and doubles in size .
After it has been resting, divide the dough into equal portions and roll out in oval shaped naan.
Heat a griddle or tawa on medium heat. once the naan is rolled out apply a little water all over it( on top as we want the wet naan on to the griddle to stick).
Now flip the tawa upside down and take the watered side and place it on the tawa. The wet or watered side should be on the tawa and it will stick right away.
Once you see some bubbles on top of the naan. It is time to turn the tawa on stove flame. Increase the heat to high when you turn griddle upside down onto flame, As we have used water to stick the naan it won't fall on the flame and stick to the griddle and in turning the griddle we are cooking naan on the upper side also without flipping it. Cook it on all sides (brown patches), turn the tawa with the help of a spatula remove it and spread some butter and serve hot.
You can make this with different toppings like Chopped Garlic, chopped chives, or Kalonji.
