Love fine Indian traditional foods? Then you’ve got to try this incredible Mutton pulao or what we call it in my city “Baitha Khana” .It’s not as spicy or colorful as chicken biryani but it has a deep but subtle flavors.
This recipe of Mutton Pulao is very easy and simple because it can be made with ingredients that you have handy.
You can make in an Instant pot .

For Mutton marinade
- 1/2 kg Mutton with bones
- 1 large Tomato
- 1 cup Coriander Leaves + Mint leaves
- 3 Green Chilies
- 3/4 cup Whisked Thick Yogurt Full Fat
- 1&1/2 tbsp Ginger & Garlic Paste
- 1 tsp salt
- 1/4 tsp Turmeric Powder
- 1/2 tsp Garam Masala Powder
- 1 Black Cardamom
- 2 sticks Cinnamon
- 1 cup water
- 2 tbsp oil
For Rice
- 2&1/2 cup basmati rice
- 1/3 cup oil
- 2 Bay Leaves
- 1/2 tsp Caraway Seed(Shahjeera)
- 4 cloves
- 1/2 medium size onion sliced
- 2 tbsp Chopped Coriander & Mint leaves
- 3-5 Green Chillies slit
- 1 tbsp Ginger & Garlic Paste
- 3/4 tsp Garam Masala Powder
- salt to taste
- 2 tbsp Lemon juice
- 2&1/2 cups Hot water
- 2 medium sized Onion for deep frying
- 1/4 cup ghee
- 1 pinch orange food colour optional
For Rice
Soak the long grain basmati rice for 1 hour or at least 30 minutes.
Slice the two onions, deep fry in oil till golden brown & Crispy . Keep aside.
Heat oil in the handi or pan. Add bay leaves, green cardamom, shahzeera and fry for a few seconds. Add half sliced onion & cook until it changes its color.
Add in the Ginger & garlic paste, chopped coriander & mint leaves.
Now add the cooked meat & bring to a boil. Add in the crushed fried onions & let it cook on medium to high flame until it releases it's oil. Stirring continuously.
Once the water is dried ,Add Hot water, green chilies slit , garam masala, salt & Mix well.
Add soaked basmati rice & let the meat and rice cook until most of the water has been absorbed. Add fried onions, chopped coriander leaves, food color & ghee on top . Reduce the heat and cover with a lid. Let it cook on a very low flame for 10-12 minutes.
Serve hot with raita or Dalcha.
