For Batter
- 1/2 cup all-purpose flour
- 1/2 cup Corn Flour
- 2 tbsp rice flour
- 1 tbsp Ginger & Garlic Paste
- 1 tsp salt
- 1/2 tsp Red Chilly Powder
- water as needed to make a runny batter
- oil for frying
For Cauliflower
- 250 gm Cauliflower florets
- water for boiling
- 1/4 tsp Turmeric Powder
- 1 tsp salt
For Manchurian sauce
- 2 tbsp oil
- 1 small onion finely chopped
- Handful of curry leaves
- 6 Green Chillies chopped
- 10 cloves of garlic
- 1 tsp chopped ginger
- salt to taste
- 1/2 tsp Red Chilly Powder
- 1/2 cup tomato ketchup
- 2 tbsp soy sauce
- 2 tbsp sweet and spicy sauce or red chili sauce
- 1 tbsp Vinegar
- 2 tbsp water to adjust the thickness
- 1/4 cup Finely chopped Coriander Leaves
For Cauliflower
In a vessel water water, turmeric powder and salt. Bring the water to rolling boil. Mean while cut and clean the cauliflower florets.Add in the boil water. Let it boil for only 2minutes and strain immediately.Now rinse with cold water to stop the cooking process and drain the water.Spread on a clean towel or a wide colander to remove excess moisture.
For Batter
In a bowl combine all purpose flour, corn flour, rice flour, salt, red chili powder and ginger garlic paste. Add water gradually and mix well to get a smooth batter.
The batter shouldn't be runny or very thick.
For Manchurian sauce
In a pan or wok heat oil, add green chillies, garlic, ginger, curry leaves and onion.saute for 1-2 minutes. Now add sauces , vinegar, salt and red chili powder.Add water to adjust the thickness. Cook for 1 minute. Manchurian sauce is ready.Add the fried cauliflower just before serving. Add coriander leaveson top and serve hot.
