Dum Ki Chai
The whole of India runs on the magical drink “Chai”. Here i am sharing the most amazing Hyderabadi 'Dum Ki Chai' recipe. Dum ki chai is prepared by brewing the tea on very low flame for longer period of time by covering it with a lid to lock the aroma of tea.

- 3&1/2 Cup Water
- 2&1/4 Cup Full Fat Milk
- 3 tsp Tea Leaves
- 2 tbsp Sweetened Condensed Milk
- 1-2 tbsp Sugar
- 3 Green Cardamom
- 1 inch Ginger
In saucepan take water and boil. Into the boiling water add cardamom, ginger, tea and sugar(optional).
Cover the lid and boil it for 35 minutes until the tea decoction is reduce to half.
To avoid steam from escaping place a heavy vessel on it or place some dough in the corners of the lid and seal completely.
In another pan take milk add condensed milk and boil it until it reduced to half.(strain the milk at this point if you don't like the malai ) .
Now to assemble the tea pour decoction tea up to 1/4 of the cup then add reduced milk or add all the reduced milk in the strained decoction and serve hot!!
I don't recommend using low fat or skimmed milk for this recipe.
