For Chicken Marinade
- 1 kg Chicken with Bones
- 1/3 cup Thick cream
- 15 Cashew soaked
- 3 2inch Ginger
- 6 large garlic cloves
- 1/2 cup Chopped Coriander & Mint leaves
- 4 green chillies
- 2 medium onion
- 1/4 cup oil
- 1 tsp salt
- 3/4 tsp Black Pepper Powder
- 1/2 tsp White Pepper Powder
- 3/4 tsp Garam Masala Powder
- 1&1/2 tsp Coriander Powder
- 1 tsp Cumin Powder
For Gravy
- 1/3 cup oil
- 2 2inch Cinnamon Stick Dalchini
- 4 Green Cardamom hari Elaichi
- 1 Black Cardamom badi Elaichi
- 1 Bay Leaf tej patta
- 1/2 floret mace javitri
- 10 Black Peppercorns sabit kaali mirch
- salt to taste
- 1 tbsp Kasuri Methi
- 1/2 tsp Black Pepper Powder
- 1/2 tsp Garam Masala Powder
- 3-5 green chillies
For chicken Marinade
Soak cashews for 1 hour and make a fine paste.
To make green masala in a mixer grinder or food processor add coriander & mint leaves, green chillies, ginger garlic & onion. Make a fine paste and keep aside.
In a large vessel add chicken pieces, green masala, cashew paste, yoghurt, cream and spices. Mix well until chicken pieces are well coated. Cover and let it rest for at least 1 hour or keep in the refrigerator for overnight for best results.
Heat a grill pan or any non-stick pan, add Oil & chicken pieces( Don't add the liquid). Cook the chicken pieces on both sides until golden brown. Takeout in a plate & keep aside.
For Gravy
In a pan add oil & whole spices. Fry for 1-2 minutes.
Now add the remaining marinated liquid & cook on medium flame for 3-4 minutes.
Add the Grilled chicken pieces into the gravy. Cover & cook for 10 minutes or until the chicken is tender & cooked completely.
Now add kasuri methi, salt, pepper powder, garam masala & green chillies.Mix well and cook for 2 minutes.Serve hot with rice or naan.
