Tamarind Chutney

Chatpati Tamarind/Imli Chutney
- 3/4 cup Tamarind/Imli
- 4 cups Water warm
- 1&1/2 tsp Kashmiri Red Chili Powder
- 1/2 tsp Cumin Powder
- 1/4 tsp salt
- 3 pinch Black Salt
- 2 tbsp Granulated Sugar
- 1/3 cup Jaggery roughly chopped
- 2 Pitted Dates large
For Bhel
- 4 cups Puffed Rice/Murmura
- 1 large Tomato chopped
- 1 medium Onion chopped
- 2 tbsp Coriander Leaves chopped
- 1/2 tsp Salt or to taste
- 1&1/2 tsp Kashmiri Red Chili Powder
- 1/2 tsp Cumin Powder
- 2 tbsp Lemon Juice
- 1/2 cup Sev /Aloo Bhujiya
- 1/2 cup Chips crushed
- 1 tbsp sugar Optional
- Prepared Chutney as desired
For Chutney
To prepare chutney soak tamarind in warm water for 1hr.
Heat a pan & add soaked tamarind & water. Bring it to a boil.
Now add Kashmiri Red chilly powder, salt, cumin powder, black salt and sugar. Mix well & cook for 2min.
Now add Jaggery & Dates. Mix and cook on medium flame stirring occasionally to get the thick desired consistency (8-10min)
Strain this mixture & store in a clean fry container .Cool this mixture completely. Imli chutney is ready!!
You can store this in refrigerator up to 2 weeks in an air tight container.
For Bhel
To make Bhel, In a big bowl add Puffed rice/murmure, Salt, Sugar, Red chilly powder, onion, tomato, chopped coriander leaves, lemon juice, cumin powder, Sev and prepared Tamarind chutney.
Mix everything together until well combined. Add crushed chips and add more tamarind chutney if needed.
Once you prepare it, do not keep it for a long time as it will get moist and will not taste good.
