Kadhai spice mix
- 1 tbsp Coriander seeds
- 1/2 tbsp cumin seed
- 1/2 tsp shahzeera
- 5 cloves
- 6 Green Cardamom
- 3 inch Cinnamon Stick
- 2 Strand Mace
- 1 Black Cardamom
- 1/2 tsp Fennel Seed
- 3-4 Kashmiri dry chillies
For Gravy
- 1 kg Chicken with Bones
- 1/4 cup Oil
- 1 tbsp garlic paste
- 1 tsp chopped ginger
- 1 tsp Cumin Seeds
- 10 Curry Leaves
- 15 Garlic cloves
- 5 Green Chillies slit
- salt to taste
- 1/4 tsp Turmeric Powder
- 1 tsp Red Chilly Powder
- 3-4 Tomato
- 1/2 cup Whisked Thick Yogurt Full Fat
- 2 tbsp Chopped Coriander & Mint leaves
For Gravy
In a pan heat oil and add garlic, cumin, curry leaves, green chillies. sauce for 1minute.
Add chicken, garlic paste and chopped ginger. Cook on high flame for 5 minutes.
Cut tomatoes in half and place on chicken. Cover the lid and cook on low flame for 10 minutes.
Now remove the tomato skin and mash the tomatoes well using a spoon.
Add the prepared kadhai spice mix and cook on high flame until its releases its oil.
Add yoghurt and cook for 3-4 minutes.
Add coriander and mint leaves and add salt if needed. Serve hot with rice or roti.
