Lemon Berry Bundt Cake
Bundt cakes are my favourite. It’s baked in a single bundt cake pan and it look super impressive.
This is my family’s favourite lemon berry bundt cake recipe. It’s an irresistible flavorful juicy cake with lots of berries with a touch of citric flavor.
I added the white chocolate ganach on top with fresh berries.

- 2 large eggs
- 1&1/4 cups sugar
- 1 tbsp lemon peel to grind with sugar
- 1/2 cup Melted Butter room temp
- 1/4 cup oil
- 1 tsp vanilla
- 1/2cup+2tbsp buttermilk
- 2 cups all purpose flour
- 3/4 tsp Baking Powder
- 1/4 tsp Baking Soda
- 1/2 tsp salt
- 1 cup chopped berries
For topping
- 1/2 cup melted white chocolate
- 1/2 cup Heavy cream
- 1 tsp lemon zest
- 1 cup fresh berries
Prepare a bundt pan by applying butter generously in each and every corner of the pan.Add flour & coat well, tap out excess flour and keep in the refrigerator for 15min. Measure granulated sugar and add in a bowl .Add lemon peel & grind until it combines with the sugar. (Do not grind into a fine powder). In a bowl add eggs,sugar & vanilla & whisk until light & pale in colour (3-4 min).Add butter,oil & buttermilk and mix again. Now sift in the flour, baking powder, baking soda, salt & mix well with a spoon or spatula until well combined. Do not over-mix .Add fresh berries & mix well with a spatula. Pour the batter into the prepared bundt pan carefully. Bake at 180c for 50-60min or until the toothpick inserted in the centre comes out clean. Take out the pan from the oven & let it cool for 15min in the pan.Now using a cake stick loosen the sides of cake & then invert onto a wire rack carefy & cool completely. For white chocolate ganache, Melt white chocolate in a bowl with heavy cream. Add lemon zest -& mix well. Refrigerator for 1-2 hours . You should have a thick pourable consistency.Pour carefully on the cake as desired & top with fresh berries.
