Mutton Roghan Josh
A simple Mutton gravy flavored with aromatic spices like fennel, cloves, cardamom & ginger.
This name is derived from Persian words in which Rogan meals oil and Josh mean Intense heat.
This dish is very flavorful and aromatic but it doesn’t generally pack a lot of heat because it gets it’s fiery red color from powdered Kashmiri chili.

- 1/2 kg Mutton with bones
- 1/2 cup Vegetable Oil/Ghee/mustard oil
- 1 medium Onion sliced
- 2 tbsp Ginger & Garlic Paste
- 3 Cloves
- 1/2 tsp Cumin seed
- 1 Black cardamom
- 1/4 tsp Hing
- 1&1/2 tsp Salt or to taste
- 1/2 cup Whisked Thick Yogurt Full Fat
- 2 tsp Kashmiri Red Chili Powder
- 1&1/4 tsp sonth Powder/Dry ginger powder
- 1&1/2 tsp Fennel seed powder /Saunf powder
- 3-4 cups Water
- 1/2 tsp Cinnamon powder
- 3/4 tsp Garam Masala Powder
- 8 strands Saffron soaked in water
- 1/4 tsp Food colour/Ratan joth
In a pan heat oil and add hing, black cardamom and cloves.
Add washed Mutton pieces, Onion and salt. Fry meat till it turns brown on medium flame for 5-10 minutes.
Next add in the kashmiri red chilly powder and whisked yoghurt. Stir and cook for 2-3 minutes on medium flame
Add sonth powder and fennel seeds powder and cook for 2-3 minutes.
Add Water and bring to a boil & cook on high flame for 2-3 minutes.
Now close the lid and slow cook on low flame for 50-60 minutes or in pressure cooker for 10 minutes until meat is tender and cooked completely.
Add cinnamon powder and garam masala powder . Check for salt add if needed. you can add water to adjust the consistency. Serve hot with Naan or rice.
