Gosht ka Achaar / Meat pickle
This is my most favorite and amazing pickle recipe with Meat that is made in our house specially on Eid ul Adha days. This Meat pickle has ground mustard seeds, Cumin seeds and lemon juice which imparts a major flavor, aroma and taste.
This is my aunt’s recipe. She makes the most amazing achaar. Indians love Achar the most and so do I. Pickles are something that can be eaten along with plain dals and pickles work as a great combination with rice and dal.
The word pickle itself makes us feel that the whole process is quite taxing and lengthy but the procedure is not that difficult and the Achar can be stored for a couple of days.

- 1/2 kg Bonelss Beef/Mutton
- 1/2 cup Lemon Juice
- 2 tsp Kashmiri Red Chili Powder
- Salt to taste
- 1/2 tsp Turmeric Powder
- 2 tbsp Ginger & Garlic Paste
- 1/2 tbsp Cumin Seeds
- 1/2 tbsp Mustard seeds
- 4-5 Dry red chillies
- 1/2 tsp Cumin Seeds
- 1/2 tsp Mustard seeds
- 1/4 tsp Black seeds/Kalonji
- 8-10 Curry leaves
- 1/2 cup Oil
In a pan dry roast 1/2tbp of each Mustard and Cumin seeds. Make a fine powder of these roasted seeds . Keep aside.
In a bowl add lemon juice, ginger garlic paste, salt, red chili powder ,turmeric powder and roasted seed powder . Mix until well combined.
Add Meat (small pieces) , marinate and refrigerate for at least 1 hour.
In a pressure cooker heat oil, add Mustard seeds, cumin seeds, curry leaves, dry red chillies & black seeds. Fry for 1 minute.
Now add marinated meat and fry on high flame for 10 minutes.(don't skip this step).
Add 1 cup water and pressure cook for 8-9 min or till the meat is tender and cooked.
Adjust the consistency add water if needed. Enjoy!!
Tips:
- Use only boneless and small pieces of Meat.
- Marination & roasting is very necessary don't skip this step.
- Oil acts as preservatives in pickles . Always add more oil in your pickle.
- Don't add more than mentioned quantity of cumin & mustard seed powder.
- Don't burn the seeds while dry roasting.
